They were brought to the U.S. in the late 19th and early 20th centuries by Eastern European Jewish immigrants escaping persecution. these immigrants happened to move to New York City. Though there is a difference between the original bagels and New York bagels. there are a couple of main differences between New York Bagels and the original ones. True NY bagels are not big , sweet, and fluffy; t hey have a dense, toothsome bite. this is because NY bagels are boiled before baking, which gelatinizes the outer starch layer, which, when baked ,turns into a crust that traps moisture inside.
